- 8 slices rye bread
- 1/2 lb corned beef, thinly sliced
- 4 slices Swiss cheese
- 1 cup sauerkraut, drained
- 1/4 cup Russian dressing (or Thousand Island dressing)
- 4 tbsp unsalted butter, softened
Instructions
- Preheat a griddle or skillet over medium heat.
- Spread a thin layer of butter on one side of each slice of rye bread.
- On the unbuttered side of 4 slices, spread a tablespoon of Russian dressing.
- Layer each slice with corned beef, Swiss cheese, and sauerkraut. Top with the remaining bread slices, buttered side facing out.
- Grill the sandwiches in the preheated skillet for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
- Slice in half and serve immediately, enjoying the melty, savory goodness!
