- ¾ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp lime zest (about 2 limes)
- 2 tbsp fresh lime juice
- ½ cup shredded coconut (sweetened or unsweetened)
- ¼ cup coarse sugar (for rolling)
Instructions

Preheat the Oven & Prepare the Baking Sheet:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.

Make the Dough:
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat together butter and granulated sugar until light and fluffy (about 3 minutes).
- Add egg, vanilla, lime zest, and lime juice and mix until combined.
- Gradually add the dry ingredients and mix until just combined.
- Stir in shredded coconut.

Shape the Cookies:
- Roll dough into 1-inch balls and then roll them in coarse sugar.
- Place on the prepared baking sheet, about 2 inches apart.
- Slightly flatten with the back of a spoon.

- Bake for 10-12 minutes, until the edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
