Instructions

  • Preheat the Oven & Prepare the Baking Sheet:

    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.
  • Make the Dough:

    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
    • In a large bowl, beat together butter and granulated sugar until light and fluffy (about 3 minutes).
    • Add egg, vanilla, lime zest, and lime juice and mix until combined.
    • Gradually add the dry ingredients and mix until just combined.
    • Stir in shredded coconut.
  • Shape the Cookies:

    • Roll dough into 1-inch balls and then roll them in coarse sugar.
    • Place on the prepared baking sheet, about 2 inches apart.
    • Slightly flatten with the back of a spoon.
