Description
Indulge in the heavenly layers of Coffee and Fudge Ice Cream Cake, a delightful dessert that combines rich fudge, coffee-flavored ice cream, and a crunchy graham cracker crust.
Ingredients
1 cup unsweetened cocoa powder
1/2 cup heavy cream
1/2 cup honey
2/3 cup granulated sugar
1 stick (8 tablespoons) Land O Lakes® Salted Butter
1 teaspoon vanilla extract
salt
1 pint chocolate ice cream
1 pint coffee chip ice cream
1 pint vanilla ice cream
18–20 sheets graham crackers
1 cup heavy cream
1 tablespoon powdered sugar
Instructions
- Begin by preparing the fudge sauce: In a medium saucepan, combine cocoa powder, heavy cream, honey, granulated sugar, butter, vanilla extract, and a pinch of salt. Cook over medium heat, stirring constantly until the mixture is smooth and thickened. Remove from heat and let cool.
- In a separate bowl, whip 1 cup of heavy cream with powdered sugar until soft peaks form. Set aside.
- To assemble the cake, place a layer of graham crackers at the bottom of a cake pan. Spread half of the chocolate ice cream over the crackers, followed by half of the coffee chip ice cream, then half of the vanilla ice cream.
- Drizzle half of the fudge sauce over the ice cream layers. Repeat the layers with graham crackers, the remaining ice creams, and the remaining fudge sauce. Top with the whipped cream.
- Cover and freeze for at least 4 hours or until firm. Before serving, let the cake sit at room temperature for 10 minutes to soften slightly. Slice and enjoy!
Notes
For added flavor, feel free to mix in some chocolate chips or nuts between the layers. This cake is best enjoyed on the day it’s made but can be stored in the freezer for up to a week.
