Ingredients
For the crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

6 tbsp melted butter
For the cheesecake filling:

16 oz (2 blocks) cream cheese, softened

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream
For the streusel topping:

½ cup all-purpose flour

½ cup brown sugar

1 tsp cinnamon

4 tbsp cold butter, cubed
Optional glaze:

½ cup powdered sugar

1–2 tbsp milk
Instructions

Preheat oven to 325°F (163°C). Line a springform pan with parchment paper or grease it lightly.

Make the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.

Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Mix until creamy.

Pour the filling over the crust and smooth the top.

Combine streusel ingredients in a bowl using a fork or your fingers until crumbly. Sprinkle over the cheesecake.

Bake for 45–50 minutes or until the center is slightly jiggly. Let cool completely, then refrigerate for at least 4 hours.
