For the crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tbsp melted butter

For the cheesecake filling:

  • 16 oz (2 blocks) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

For the streusel topping:

  • ½ cup all-purpose flour

  • ½ cup brown sugar

  • 1 tsp cinnamon

  • 4 tbsp cold butter, cubed

Optional glaze:

  • ½ cup powdered sugar

  • 12 tbsp milk


Instructions

  • Preheat oven to 325°F (163°C). Line a springform pan with parchment paper or grease it lightly.

  • Make the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan.

  • Beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Mix until creamy.

  • Pour the filling over the crust and smooth the top.

  • Combine streusel ingredients in a bowl using a fork or your fingers until crumbly. Sprinkle over the cheesecake.

  • Bake for 45–50 minutes or until the center is slightly jiggly. Let cool completely, then refrigerate for at least 4 hours.

  • Drizzle glaze before serving, if desired.
