1 lb leftover turkey or rotisserie chicken, shredded
1 cup frozen peas and carrots
1 medium onion, diced
2 cloves garlic, minced
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken or turkey broth
1 cup milk
1 teaspoon dried thyme
Salt and pepper to taste
1 refrigerated pie crust
1 egg, beaten
Instructions
Preheat your oven to 425°F (220°C).
In a large skillet, melt the butter over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Toss in the minced garlic and sauté for another minute until fragrant.
Sprinkle the flour over the sautéed vegetables, stirring to combine. Cook for about a minute. Gradually whisk in the broth and milk, stirring constantly until the mixture thickens (about 3-5 minutes).
Stir in the shredded turkey, frozen peas and carrots, dried thyme, salt, and pepper. Remove from heat and let it cool slightly.
Roll out your pie crust and place it in a pie dish, press gently to fit. Pour in the turkey filling. If using a second crust, lay it over the top and seal the edges.
Cut a few slits in the top crust for steam, brush it with the beaten egg.
Place the pie on a baking sheet and bake for 30-35 minutes, until the crust is golden brown and filling is bubbling.
Let it cool for 10 minutes before slicing.
