  • 1 cup frozen peas and carrots
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup chicken or turkey broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 refrigerated pie crust
  • 1 egg, beaten

  • Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large skillet, melt the butter over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Toss in the minced garlic and sauté for another minute until fragrant.
  • Sprinkle the flour over the sautéed vegetables, stirring to combine. Cook for about a minute. Gradually whisk in the broth and milk, stirring constantly until the mixture thickens (about 3-5 minutes).
  • Stir in the shredded turkey, frozen peas and carrots, dried thyme, salt, and pepper. Remove from heat and let it cool slightly.
  • Roll out your pie crust and place it in a pie dish, press gently to fit. Pour in the turkey filling. If using a second crust, lay it over the top and seal the edges.
  • Cut a few slits in the top crust for steam, brush it with the beaten egg.
  • Place the pie on a baking sheet and bake for 30-35 minutes, until the crust is golden brown and filling is bubbling.
  • Let it cool for 10 minutes before slicing.
