  • Instructions

  • Bring a large pot of salted water to a boil. Toss in the corn for about 5 minutes until tender. If grilling, char the corn over medium heat until slightly blackened. Allow to cool before cutting kernels off the cob.
  • While the corn is cooking, slice the cherry tomatoes in half.
  • Cut the avocado in half, remove the pit, and scoop out the flesh. Dice into bite-sized pieces.
  • Finely chop the red onion and fresh cilantro.
