Description
Cowboy Butter Chicken Linguine is a spicy, garlicky, buttery pasta dish that combines tender chicken with a zesty cowboy butter sauce over a bed of linguine. It’s comforting, flavorful, and perfect for weeknight dinners or entertaining guests.
Ingredients
• 12 oz linguine
• 2 tablespoons olive oil
• 1 lb boneless skinless chicken breast, sliced thin
• Salt and pepper, to taste
• 4 tablespoons unsalted butter
• 4 garlic cloves, minced
• 1 tablespoon Dijon mustard
• 1 teaspoon smoked paprika
• 1/2 teaspoon crushed red pepper flakes (adjust to taste)
• Juice of 1 lemon
• 2 tablespoons chopped fresh parsley
• 1 tablespoon chopped fresh chives
• 1 tablespoon chopped fresh thyme (or 1 tsp dried)
• Optional: grated Parmesan cheese for topping
Instructions
1. Cook linguine according to package instructions. Drain and set aside.
2. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove from pan and set aside.
3. In the same pan, melt butter over medium-low heat. Add garlic and sauté until fragrant, about 1 minute.
4. Stir in Dijon mustard, paprika, red pepper flakes, lemon juice, and herbs. Let simmer for 2–3 minutes.
5. Return cooked chicken to the skillet and stir to coat in cowboy butter sauce.
6. Add cooked linguine and toss everything together until evenly coated.
7. Serve hot, garnished with more fresh herbs and Parmesan if desired.
Notes
You can substitute shrimp or steak for the chicken.
Add a splash of cream or chicken broth if you prefer a saucier pasta.
