- 1 (10 oz) can Rotel tomatoes, drained
- 1 (15 oz) can corn, drained
- ½ cup cooked bacon, crumbled
- 2 jalapeños, diced
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- Salt & pepper to taste
- ¼ cup green onions, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix cream cheese, sour cream, cheddar, and pepper jack cheese.
- Stir in Rotel, corn, bacon, jalapeños, and seasonings until well combined.
- Transfer mixture to the baking dish and spread evenly.
- Bake for 20-25 minutes until hot and bubbly.
- Garnish with green onions and serve warm with tortilla chips or crackers.
