Ingredients

1 tablespoon olive oil

1 onion, chopped

2 carrots, diced

2 celery stalks, chopped

3 garlic cloves, minced

1 zucchini, diced

1 cup green beans, chopped

1 can (14.5 oz) diced tomatoes

4 cups vegetable broth

1 can (15 oz) cannellini beans, drained and rinsed

1 cup small pasta (like elbow macaroni or ditalini)

1 teaspoon dried basil

1 teaspoon dried oregano

Salt & pepper, to taste

2 cups spinach, chopped

Optional: grated Parmesan for garnish
Instructions

Sauté veggies: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until softened. Add garlic and cook for 1 more minute.

Add vegetables & broth: Stir in zucchini, green beans, diced tomatoes, and vegetable broth. Bring to a boil.

Cook pasta & beans: Add the cannellini beans, pasta, basil, and oregano. Lower the heat and simmer for 20 minutes, until the vegetables are tender and the pasta is cooked.

Finish soup: Stir in spinach and cook for an additional 2–3 minutes until wilted. Adjust seasoning with salt and pepper.
