4 boneless, skinless chicken breasts
6 slices of bacon
1 cup heavy cream
1 cup chicken broth
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped
Instructions
In a large skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove and let drain on paper towel, saving the bacon grease.
Season chicken breasts with salt and pepper. In the same skillet with reserved bacon grease, add olive oil if needed. Increase heat to medium-high and sear chicken on both sides until golden brown, about 4-5 minutes per side.
Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
Pour in the chicken broth, scrape the bottom of the pan, and let it simmer for a minute. Stir in the heavy cream and Italian seasoning.
Chop the crispy bacon and mix it into the sauce. Place the seared chicken back into the pan, coating it well in the creamy sauce. Reduce heat to low and simmer for another 5-10 minutes until chicken is cooked through.
Sprinkle chopped fresh parsley over the top before serving.
