Ingredients
Scale
8 oz (about 225g) pasta of your choice
2 cups fresh broccoli florets
3 cloves garlic, minced
1 cup heavy cream or plant-based alternative
1 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and pepper to taste
Crushed red pepper flakes (optional)
Instructions
1. Boil the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook according to the package instructions, usually about 8-10 minutes. You want it al dente, so keep an eye on it!
2. Blanch the Broccoli: Two minutes before the pasta is done, toss the broccoli florets into the pot. Drain the pasta and broccoli together, but save about a cup of pasta water.
3. Make the Creamy Sauce: In the same pot, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
4. Mix in the Cream: Pour in the heavy cream and stir to combine with the garlic. Slowly sprinkle in the Parmesan cheese, stirring continuously until it melts into a smooth sauce. If it thickens too much, add a splash of your reserved pasta water.
5. Toss and Serve: Add the pasta and broccoli back to the pot, mixing everything together until the pasta is coated in the creamy sauce. Season with salt, pepper, and crushed red pepper flakes if desired. Serve hot, with extra Parmesan on top.
