Ingredients
8 oz spaghetti
1 lb chicken breast or thighs cut into chunks
1 tbsp Cajun seasoning
1 tbsp olive oil (for chicken)
1 can (15 oz) chickpeas drained and rinsed
1 tbsp olive oil (for chickpeas)
1 bulb garlic
1 tsp olive oil (for garlic)
1 cup feta cheese crumbled
4 oz cream cheese softened
1 tbsp olive oil (for feta)
1 tbsp lemon juice (optional)
2 tbsp parsley chopped
1 tsp salt (adjust to taste)
½ tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the bulb of garlic in aluminum foil with 1 tsp of olive oil and roast for 30 minutes.
- In a skillet, heat 1 tbsp olive oil over medium heat, add chicken chunks, and sprinkle with Cajun seasoning; cook until browned and cooked through.
- In another pan, heat 1 tbsp olive oil, add chickpeas, and cook until slightly crispy.
- Cook spaghetti according to package instructions; drain and set aside.
- Once garlic is roasted, squeeze out the cloves and mix with feta cheese, cream cheese, and 1 tbsp olive oil until smooth and creamy.
- In a large serving bowl, combine the cooked spaghetti, chicken, chickpeas, and whipped feta. Mix well and adjust seasoning with salt and pepper.
- Drizzle with lemon juice (if using) and garnish with chopped parsley before serving.
Notes
Feel free to adjust the amount of Cajun seasoning to match your spice preference. This dish pairs nicely with a side salad.
