  • 1 lb smoked sausage (or andouille sausage), sliced
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup chicken broth
  • 1 ½ cups heavy cream
  • 8 oz penne pasta (or any pasta of choice)
  • 1 tbsp butter
  • ¼ cup parmesan cheese, grated
  • 2 tbsp chopped parsley (for garnish)

Instructions

1️⃣ Cook the Pasta:

  • Cook the pasta according to package directions. Drain and set aside.

2️⃣ Sauté the Sausage:

  • In a large skillet, heat olive oil over medium heat.
  • Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.

3️⃣ Make the Sauce:

  • In the same skillet, add butter and sauté onions until soft, about 2 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Stir in Cajun seasoning, paprika, salt, and pepper, then pour in chicken broth and heavy cream.
  • Bring to a simmer and let it cook for about 5 minutes to thicken.

4️⃣ Combine and Serve:

  • Add the cooked sausage and pasta to the skillet. Toss everything together until well coated.
  • Stir in parmesan cheese and let it melt into the sauce.
  • Garnish with chopped parsley and serve immediately.
