- 1 lb smoked sausage (or andouille sausage), sliced
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 cup chicken broth
- 1 ½ cups heavy cream
- 8 oz penne pasta (or any pasta of choice)
- 1 tbsp butter
- ¼ cup parmesan cheese, grated
- 2 tbsp chopped parsley (for garnish)
Instructions
1️⃣ Cook the Pasta:
- Cook the pasta according to package directions. Drain and set aside.
2️⃣ Sauté the Sausage:
- In a large skillet, heat olive oil over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
3️⃣ Make the Sauce:
- In the same skillet, add butter and sauté onions until soft, about 2 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in Cajun seasoning, paprika, salt, and pepper, then pour in chicken broth and heavy cream.
- Bring to a simmer and let it cook for about 5 minutes to thicken.
4️⃣ Combine and Serve:
- Add the cooked sausage and pasta to the skillet. Toss everything together until well coated.
- Stir in parmesan cheese and let it melt into the sauce.
- Garnish with chopped parsley and serve immediately.
