1 pound of cheese tortellini (fresh or frozen)
1 pound of thinly sliced steak (ribeye or sirloin)
1 tablespoon olive oil
1 medium onion, sliced
1 bell pepper, sliced
2 cloves fresh garlic, minced
1 cup heavy cream
1 cup provolone cheese, shredded
½ cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Boil the tortellini in a large pot of salted water according to package instructions until al dente. Drain and set aside.
In a large skillet over medium-high heat, add olive oil and sear the sliced steak seasoned with salt and pepper until cooked through (3-5 minutes). Remove from skillet.
In the same skillet, sauté sliced onion and bell pepper until tender and caramelized (about 5 minutes). Add minced garlic for the last minute.
Lower heat and pour in heavy cream, simmering gently before mixing in provolone and Parmesan cheeses until melted. Season to taste.
Combine the cooked tortellini and steak with the creamy sauce until evenly coated.
