Ingredients
-
1 tbsp olive oil
-
1 small onion, chopped
-
2 garlic cloves, minced
-
4 cups chicken broth
-
1 cup whole milk
-
2 cups elbow macaroni
-
1 1/2 cups shredded cheddar cheese
-
1/2 cup grated parmesan cheese
-
Salt and pepper, to taste
-
1 tsp dried thyme (optional)
-
Fresh parsley, chopped, for garnish
Instructions
-
In a large pot, heat olive oil over medium heat. Add chopped onion and cook for 3-4 minutes until softened.
-
Add minced garlic and cook for another 1 minute until fragrant.
-
Pour in chicken broth and milk, bringing the mixture to a boil. Once boiling, add the macaroni and reduce the heat to a simmer.
-
Cook the macaroni for 8-10 minutes, stirring occasionally, until it’s tender and the soup has thickened slightly.
-
Stir in the cheddar cheese and parmesan cheese, continuing to cook until the cheese melts and the soup becomes creamy.
-
Season with salt, pepper, and dried thyme.
-
Serve the soup hot, garnished with fresh parsley.
Notes
-
For a richer flavor, add a splash of heavy cream instead of whole milk.
-
You can swap the cheddar cheese with other types like gouda or mozzarella for a different taste.
-
For extra veggies, consider adding chopped carrots or spinach to the soup.
