8 oz of fettuccine pasta
2 tbsp of unsalted butter
2 cloves of fresh garlic, minced
1 cup of heavy cream
1 cup of grated Parmesan cheese
1 lb of boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
Chopped parsley, for garnish
Instructions
In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain the rest. Set the pasta aside while you prepare the sauce.
In a large skillet over medium heat, melt 1 tablespoon of butter. Add the chicken pieces, seasoning them with salt and pepper. Sauté until they are cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of butter and the minced garlic. Sauté for about 30 seconds, or until fragrant. Pour in the heavy cream, stirring gently, and bring it to a simmer.
Gradually whisk in the Parmesan cheese until it melts, creating a creamy sauce. If the sauce is too thick, you can slowly add a bit of the reserved pasta water until you reach your desired consistency.
Gently stir in the cooked pasta and chicken until everything is well coated. Taste and adjust the seasoning with more salt and pepper if needed.
Dish out generous portions onto plates or bowls. Top with extra Parmesan cheese and chopped parsley for garnish. Enjoy!
