Ingredients
8 oz penne or short pasta
4 slices bacon, chopped
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cubed
Salt and pepper to taste
2 cloves garlic, minced
1 1/2 cups corn (fresh, canned, or frozen)
1/2 cup chicken broth
3/4 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon smoked paprika (optional)
Fresh chopped parsley for garnish
Instructions
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large skillet, cook chopped bacon over medium heat until crisp. Remove and set aside, leaving 1 tablespoon bacon fat.
3. Add olive oil and chicken to the skillet. Season with salt and pepper. Cook until browned and cooked through, about 6–8 minutes.
4. Add garlic and cook for 1 minute.
5. Stir in corn and cook for another 2 minutes.
6. Pour in chicken broth and heavy cream. Bring to a gentle simmer.
7. Add cooked pasta, Parmesan cheese, and smoked paprika. Stir to coat everything in the sauce.
8. Fold in cooked bacon and garnish with fresh parsley.
9. Serve warm.

Use rotisserie chicken to save time.
Add spinach or zucchini for extra veggies.
Swap heavy cream with half-and-half for a lighter version.
