2 chicken sausages, sliced

1 cup orzo pasta

1 tbsp olive oil

2 cloves garlic, minced

1 cup chicken broth

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 cup spinach (optional)

Salt and pepper to taste

Fresh parsley (optional, for garnish)
Instructions

Heat olive oil in a large skillet over medium heat. Add chicken sausage slices and cook until browned and cooked through (about 5-7 minutes). Remove from the skillet and set aside.

In the same skillet, add garlic and cook for 1 minute until fragrant.

Add chicken broth and bring to a simmer. Stir in the orzo pasta, then cover and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

Lower the heat and stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes until the sauce thickens slightly.

Add the cooked chicken sausage back into the skillet and stir in spinach (if using). Cook for another 2 minutes until the spinach wilts and the sausage is heated through.
