  • 2 chicken sausages, sliced

  • 1 cup orzo pasta

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1 cup spinach (optional)

  • Salt and pepper to taste

  • Fresh parsley (optional, for garnish)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add chicken sausage slices and cook until browned and cooked through (about 5-7 minutes). Remove from the skillet and set aside.

  • In the same skillet, add garlic and cook for 1 minute until fragrant.

  • Add chicken broth and bring to a simmer. Stir in the orzo pasta, then cover and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

  • Lower the heat and stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes until the sauce thickens slightly.

  • Add the cooked chicken sausage back into the skillet and stir in spinach (if using). Cook for another 2 minutes until the spinach wilts and the sausage is heated through.

  • Season with salt and pepper to taste, and garnish with fresh parsley (optional).

Notes

  • Feel free to add other vegetables like mushrooms or bell peppers for more flavor and nutrition.

  • You can substitute heavy cream with half-and-half for a lighter version.
