Description
Creamy Coconut Lime Chicken features tender chicken breasts simmered in a rich coconut milk sauce with fresh lime and garlic. This tropical-inspired dish bursts with bright flavor and pairs perfectly with rice or vegetables.
Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
3 cloves garlic, minced
1 can (13.5 oz) full-fat coconut milk
1 teaspoon lime zest
2 tablespoons fresh lime juice
1/2 teaspoon ground ginger
Salt and pepper to taste
1 tablespoon chopped fresh cilantro (optional)
Instructions
1. Season chicken with salt and pepper.
2. Heat olive oil in a large skillet over medium heat.
3. Add chicken and sear 4–5 minutes per side until golden brown. Remove and set aside.
4. In the same skillet, sauté garlic for 1 minute.
5. Pour in coconut milk, lime zest, lime juice, and ginger. Stir well.
6. Return chicken to the skillet. Simmer uncovered for 10–12 minutes, or until chicken is fully cooked and sauce thickens.
7. Taste and adjust seasoning. Garnish with fresh cilantro and serve warm.
Notes
Use chicken thighs for extra juiciness.
Serve over jasmine rice or with roasted vegetables.
For extra heat, add red pepper flakes or diced jalapeño.
