2 large sweet potatoes, peeled and sliced into thin rounds
4 tablespoons unsalted butter, melted
4 cloves of garlic, minced
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced sweet potatoes with melted butter, minced garlic, salt, and pepper. Toss everything evenly.
In a greased 9×13 inch baking dish, layer half of the sweet potato mixture at the bottom. Sprinkle half of the smoked paprika and half of the Parmesan cheese over this layer.
Pour half of the heavy cream over the first layer.
Place the remaining sweet potatoes on top, sprinkle again with smoked paprika and Parmesan cheese, and pour the rest of the heavy cream evenly over everything.
Cover the dish with aluminum foil and bake for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 20-25 minutes until the top is bubbly and golden brown.
Once out of the oven, let it sit for about 10 minutes, then garnish with chopped fresh parsley before serving.
