Ingredients
4 boneless
skinless chicken breasts (or about 1¼ lb chicken thighs)
12 oz twisted pasta (rotini
fusilli
or cavatappi)
3 tbsp butter
1 tbsp olive oil
4 cloves fresh garlic
minced
1 cup chicken broth
1¼ cups heavy cream
1½ cups grated Parmesan cheese
Salt and black pepper
to taste
2 tbsp fresh parsley
chopped
Instructions
- Cook the twisted pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the butter and olive oil over medium heat. Season the chicken with salt and pepper, then add it to the skillet and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the pan.
- Reduce heat to low and stir in the heavy cream and grated Parmesan cheese, whisking until the cheese is melted and the sauce is creamy.
- Slice the cooked chicken and add it back to the skillet along with the cooked pasta, tossing to coat everything in the creamy sauce.
- Serve warm, garnished with chopped fresh parsley.
