1 lb large shrimp, peeled and deveined
3 tablespoons unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
2 cups spinach, chopped
Salt and pepper, to taste
1 teaspoon paprika
1 package of large tortillas or flatbreads
In a large skillet, melt the butter over medium heat.
Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant.
Toss in the shrimp and cook for about 3-4 minutes until they turn pink and opaque. Sprinkle in salt, pepper, and paprika.
Pour in the heavy cream and let it simmer for about 3-4 minutes.
Stir in the grated Parmesan cheese until it melts and the sauce is creamy.
Add the chopped spinach and cook until it wilts down.
Remove the skillet from heat and let the filling cool slightly.
Lay a tortilla flat and scoop a portion of the creamy shrimp filling onto the center. Roll it up tightly.
Repeat with remaining tortillas and shrimp filling.
Optionally, grill the rolled tortillas in the skillet for a minute on each side.
