4 boneless
skinless chicken breasts
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons unsalted butter
2 tablespoons olive oil
3 cloves garlic
minced
1/2 cup dry white wine or chicken broth
3/4 cup chicken broth
1/2 cup heavy cream
1/4 cup freshly squeezed lemon juice
1/4 cup capers
drained
2 tablespoons chopped fresh parsley
lemon slices for garnish (optional)
Instructions
- Begin by flattening the chicken breasts to ensure even cooking. Season both sides with salt and pepper.
- Dredge each chicken breast in flour, shaking off any excess.
- In a large skillet, melt butter and olive oil over medium heat. Add the chicken and cook for 5-6 minutes on each side or until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in white wine (or chicken broth) and scrape the bottom to deglaze. Let it simmer for 2-3 minutes.
- Add chicken broth, heavy cream, lemon juice, and capers. Stir well and let the sauce simmer for another 5 minutes until slightly thickened.
