  • 1 pound large shrimp, peeled and deveined

  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1 medium lemon, juiced and zested
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Red pepper flakes, optional

  • Instructions

  • Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta water and then drain the rest. Set the pasta aside.
  • Sauté the shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp, and season with a little salt and pepper. Sauté for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  • Cook the garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Make the sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add the lemon juice and zest. Let it simmer for about 3-4 minutes until it thickens slightly. Stir in the Parmesan cheese until melted and smooth.
  • Combine it all: Add the cooked pasta and sautéed shrimp to the skillet, tossing gently to coat everything in the sauce. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.
  • Garnish and serve: Sprinkle over fresh parsley and red pepper flakes, if desired.
