Ingredients

Scale
  • 8 ounces of fettuccine or spaghetti
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 4 cloves of fresh garlic, minced
  • 1 teaspoon of crushed red pepper flakes
  • 1/2 cup of chicken broth
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish

  • Instructions

  • In a large pot of boiling salted water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water and drain the rest.
  • In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  • In the same skillet, add minced garlic and crushed red pepper flakes. Sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and bring it to a simmer, letting it reduce slightly for about 2-3 minutes. Add the heavy cream and stir until combined.
  • Stir in grated Parmesan cheese until melted into the sauce. Season with salt and black pepper to taste.
  • Combine the cooked pasta and shrimp back into the skillet. If the sauce is too thick, add reserved pasta water until achieving desired consistency.
  • Garnish with fresh parsley and extra Parmesan cheese, serve hot.
