This Creamy Mushroom and Asparagus dish offers a rich, satisfying vegetarian meal packed with fresh vegetables and creamy flavor—perfect for weeknights or entertaining guests.
Ingredients
1 tbsp olive oil
2 tbsp unsalted butter
1 small onion, finely chopped
3 garlic cloves, minced
8 oz cremini mushrooms, sliced
1 bunch asparagus, trimmed and cut into 2-inch pieces
1/2 cup vegetable broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and black pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. Heat olive oil and butter in a large skillet over medium heat.
2. Add chopped onion and sauté until translucent.
3. Stir in garlic and cook for 30 seconds until fragrant.
4. Add mushrooms and cook until they release their juices and begin to brown.
5. Toss in asparagus and sauté for 3–4 minutes until tender-crisp.
6. Pour in vegetable broth and simmer for 2 minutes.
7. Stir in heavy cream and Parmesan cheese.
8. Let the sauce simmer for 3–4 minutes until thickened.
9. Season with salt and pepper.
10. Garnish with parsley and serve warm.
Notes
Serve over pasta, rice, or crusty bread for a heartier meal.
For a vegan version, use coconut cream and plant-based Parmesan.
