This creamy mushroom chicken features juicy chicken breasts cooked in a luscious sauce made with mushrooms, garlic, and cream. It’s an indulgent yet simple dish that’s perfect for any occasion.
Ingredients
-
4 boneless, skinless chicken breasts
-
2 tbsp olive oil
-
2 tbsp butter
-
8 oz mushrooms, sliced
-
3 garlic cloves, minced
-
1 cup heavy cream
-
1/2 cup chicken broth
-
1 tsp dried thyme (or fresh thyme, chopped)
-
Salt and pepper, to taste
-
1/4 cup grated parmesan cheese
-
Fresh parsley, chopped, for garnish
Instructions
-
Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
-
Cook the chicken for 5–6 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
-
In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook for 4–5 minutes until they soften and brown.
-
Add minced garlic and cook for 1 minute, until fragrant.
-
Pour in chicken broth and bring to a simmer. Let it cook for 2–3 minutes to reduce slightly.
-
Stir in heavy cream, dried thyme, and parmesan cheese. Cook for another 3–4 minutes, until the sauce thickens.
-
Return the chicken to the skillet and simmer in the sauce for another 3–5 minutes, allowing the chicken to absorb the flavors.
-
Garnish with fresh parsley and serve hot.
Notes
-
Serve with mashed potatoes, rice, or pasta to soak up the creamy sauce.
-
If you prefer a lighter version, substitute heavy cream with half-and-half or a lighter cream.
-
For a twist, add spinach or a handful of peas to the sauce for extra flavor and color.
