  • 3 cloves of garlic, minced
  • 8 ounces of mushrooms, sliced
  • 2 cups of fresh spinach, chopped
  • ½ cup of cream cheese, softened
  • ½ cup of shredded mozzarella cheese (optional)
  • Salt and pepper to taste
  • ¼ teaspoon of red pepper flakes
  • Fresh parsley, chopped for garnish

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes well, poke holes with a fork, and roast for 40-45 minutes until soft.
  • Heat olive oil in a skillet over medium heat, sauté the onion until translucent, then add garlic and cook for an additional minute.
  • Add sliced mushrooms and cook until browned and tender, around 5-7 minutes.
  • Stir in the chopped spinach and cook until wilted, about 2 minutes.
  • Remove from heat and mix in softened cream cheese until creamy, adding mozzarella cheese if desired.
  • Season with salt, pepper, and red pepper flakes to taste.
  • Slice the roasted sweet potatoes open, fluff the insides, and stuff with the creamy mushroom spinach filling.
  • Optional: sprinkle extra mozzarella on top and bake for another 5-10 minutes.
  • Garnish with fresh parsley, let cool slightly, and serve.
