4 medium sweet potatoes (about 1 ½ pounds)
2 tablespoons of olive oil
1 small onion, diced
3 cloves of garlic, minced
8 ounces of mushrooms, sliced
2 cups of fresh spinach, chopped
½ cup of cream cheese, softened
½ cup of shredded mozzarella cheese (optional)
Salt and pepper to taste
¼ teaspoon of red pepper flakes
Fresh parsley, chopped for garnish
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes well, poke holes with a fork, and roast for 40-45 minutes until soft.
Heat olive oil in a skillet over medium heat, sauté the onion until translucent, then add garlic and cook for an additional minute.
Add sliced mushrooms and cook until browned and tender, around 5-7 minutes.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
Remove from heat and mix in softened cream cheese until creamy, adding mozzarella cheese if desired.
Season with salt, pepper, and red pepper flakes to taste.
Slice the roasted sweet potatoes open, fluff the insides, and stuff with the creamy mushroom spinach filling.
Optional: sprinkle extra mozzarella on top and bake for another 5-10 minutes.
Garnish with fresh parsley, let cool slightly, and serve.
