1 pound Italian sausage (mild or hot, your choice)
1 medium onion, diced
2 cloves garlic, minced
3 cups chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 cup heavy cream
1 cup ditalini pasta
1 cup fresh spinach, packed
1 cup grated Parmesan cheese
Salt and pepper to taste
Olive oil for cooking
Instructions
In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon as it cooks. You want it to brown nicely, which should take about 5-7 minutes. Once browned, remove it from the pot and set it aside.
In the same pot, add the diced onion. Cook for about 3-4 minutes until it’s translucent. Then toss in that fragrant garlic you minced earlier, cooking for another minute.
Pour in the chicken broth and stir in the diced tomatoes (don’t drain!). Bring it to a gentle simmer.
Once it’s simmering, add the ditalini pasta and return the sausage to the pot. Let it cook according to the pasta package instructions, usually about 8-10 minutes.
After the pasta is perfectly al dente, stir in the heavy cream, fresh spinach, and Parmesan cheese.
Taste your soup and sprinkle in salt and pepper as needed. If you’re feeling adventurous, try adding a pinch of Italian herbs or red pepper flakes for an extra kick!
Ladle the soup into bowls and top with additional Parmesan cheese if desired. Pair it with a warm crusty bread or a side salad.
