1 tablespoon olive oil
1 onion
thinly sliced
4 cloves garlic
minced
1 cup sliced pepperoncini peppers
1 cup chicken broth
1 cup heavy cream
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides, about 5-7 minutes per side.
- Remove the chicken and set aside. In the same skillet, add the sliced onion and cook until softened, about 3 minutes.
- Add the minced garlic and sliced pepperoncini peppers, sautéing for an additional 2 minutes.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and return the chicken to the skillet. Simmer for 10-15 minutes until the chicken is cooked through and the sauce has thickened.
- Garnish with chopped fresh parsley before serving.
Notes
For an extra kick, you can add additional pepperoncini or a splash of the brine to the sauce.
