2 boneless, skinless chicken breasts, sliced into strips
2 tablespoons peri-peri sauce
1 cup heavy cream
1 cup chicken broth
1 cup jasmine rice
1 medium onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley or coriander, chopped
Instructions
In a medium pot, bring 2 cups of water to a boil. Add a pinch of salt and the rice. Reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork.
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until soft and translucent. Add minced garlic and stir for another minute until fragrant.
Increase heat to medium-high, add chicken strips to the skillet, season with salt, pepper, and peri-peri sauce. Cook for about 5-7 minutes until chicken is golden brown and cooked through.
Lower heat, pour in chicken broth and heavy cream, stirring to combine. Let simmer for another 5 minutes until sauce thickens.
Plate the cooked rice and drizzle the creamy peri-peri chicken on top. Garnish with fresh parsley or coriander.
