1 tablespoon coconut oil (or olive oil)
1 medium onion, diced
3 cloves fresh garlic, minced
1 tablespoon ginger, grated
2 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon cumin
1/4 teaspoon cayenne pepper (adjust based on your heat preference)
1 can (15 oz) pumpkin puree
1 can (13.5 oz) coconut milk
2 cups vegetable broth (or chicken broth)
Salt and pepper, to taste
1 cup spinach or kale (fresh or frozen)
Optional: 1 cup cooked chickpeas or tofu for added protein
Heat the oil in a large pot or deep skillet over medium heat.
