1 large head of cauliflower (about 2–3 pounds), cut into florets
1 medium onion, chopped
3 cloves of fresh garlic, minced
4 cups of vegetable broth
1 cup of coconut milk
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon smoked paprika
Fresh parsley, for garnish
Instructions
Preheat your oven to 425°F (220°C).
Toss the cauliflower florets in a bowl with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.
In a large pot, heat more olive oil over medium heat. Sauté the onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
Pour in the vegetable broth, bring to a simmer, and let it bubble for a few minutes.
Add the roasted cauliflower to the pot and simmer for another 5 minutes.
Use an immersion blender to puree the soup until smooth. If using a regular blender, transfer with caution and blend until silky.
Stir in the coconut milk and adjust seasoning as needed.
