2 tablespoons of olive oil
1 pound of large sea scallops
2 cups of diced celery
4 cloves of minced fresh garlic
1 medium onion, diced
4 cups of seafood stock
2 cups of heavy cream
1 cup of diced potatoes
1 teaspoon of dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat the oil in a large pot or Dutch oven over medium-high heat.
Pat the scallops dry with paper towels and sear for about 2-3 minutes on each side until golden. Remove from pot and set aside.
Add onions and celery to the pot and sauté for about 5 minutes until softened, then add garlic and sauté for another minute.
Add diced potatoes and stir for about 2 minutes.
Carefully add seafood stock and bring to a gentle boil, sprinkling in thyme.
Reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
Stir in heavy cream to blend with the rest of the ingredients.
Gently fold in seared scallops to warm through.
Taste and adjust seasoning with salt and pepper.
Ladle chowder into bowls, garnish with fresh parsley, and serve.
