Ingredients

  • 1 pound of large sea scallops
  • 2 cups of diced celery
  • 4 cloves of minced fresh garlic
  • 1 medium onion, diced
  • 4 cups of seafood stock
  • 2 cups of heavy cream
  • 1 cup of diced potatoes
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • Heat the oil in a large pot or Dutch oven over medium-high heat.
  • Pat the scallops dry with paper towels and sear for about 2-3 minutes on each side until golden. Remove from pot and set aside.

  • Reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
  • Stir in heavy cream to blend with the rest of the ingredients.
  • Gently fold in seared scallops to warm through.
  • Taste and adjust seasoning with salt and pepper.
  • Ladle chowder into bowls, garnish with fresh parsley, and serve.
