8 oz pasta (fettuccine or penne)
1 tbsp olive oil
2 garlic cloves, minced
1 can (14 oz) crushed tomatoes
1 cup heavy cream
8 oz salmon fillet, skinless and boneless
Salt and pepper, to taste
Fresh basil or parsley, for garnish
Parmesan cheese, for serving (optional)
Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
Prepare the salmon: While the pasta is cooking, season the salmon fillet with salt and pepper. In a non-stick pan, heat the olive oil over medium heat. Once hot, add the salmon and cook for about 4-5 minutes on each side, until it’s fully cooked and flakes easily with a fork. Remove from the pan and set aside.
Make the sauce: In the same pan, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to let it burn.
Add the tomatoes: Pour in the crushed tomatoes and stir to combine. Let it simmer for about 5 minutes.
Stir in the cream: Lower the heat and slowly pour in the heavy cream, stirring continuously. Simmer for another 3-4 minutes.
Combine pasta and salmon: Break the cooked salmon into bite-sized pieces and add it to the sauce, along with the drained pasta. Gently toss everything together to coat the pasta evenly.
