1 tablespoon of olive oil
1 small onion, diced (about 1 cup)
2 cloves of fresh garlic, minced
1 can (28 ounces) of crushed tomatoes
4 cups of vegetable broth
1 teaspoon of dried basil
1 teaspoon of dried oregano
1 cup of heavy cream
1 package (9 ounces) of refrigerated cheese tortellini
1 cup of fresh spinach
Salt and pepper to taste
Grated Parmesan cheese for serving (optional)
Heat the oil in a large pot over medium heat. Add the diced onion and sauté until translucent (about 5 minutes).
Stir in the minced garlic and sauté for an additional minute, being careful not to burn it.
Pour in the crushed tomatoes and vegetable broth. Stir in dried basil and oregano. Let simmer for about 10 minutes.
Lower the heat and stir in heavy cream until fully incorporated.
Add the cheese tortellini and cook according to package instructions (about 3-4 minutes).
