2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
1 cup sun-dried tomatoes, chopped
2 cups fresh spinach, roughly chopped
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
Fresh basil leaves for garnish (optional)
Instructions
Season your chicken breasts generously with salt and pepper.
In a large skillet over medium heat, add the olive oil. Once it shimmers, it’s ready for the chicken.
Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through (internal temp should be 165°F). Remove the chicken from the pan and set aside.
