For the Cauliflower Bites:
- 1 medium cauliflower, cut into florets
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- ½ cup milk (or plant-based alternative)
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper to taste
- Cooking spray
For the Garlic Sauce:
- ½ cup Greek yogurt (or mayonnaise)
- 1 tbsp lemon juice
- 1 garlic clove, minced
- ½ tsp honey or maple syrup
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, milk, garlic powder, paprika, salt, and pepper into a smooth batter.
- Dip cauliflower florets into the batter, then coat with panko breadcrumbs.
- Arrange on the baking sheet, spray lightly with cooking spray, and bake for 20-25 minutes until crispy and golden.
- Meanwhile, mix all garlic sauce ingredients in a bowl.
- Serve crispy cauliflower bites warm with garlic sauce on the side.
Notes
- For extra crispiness, broil for the last 2-3 minutes.
- Add a pinch of chili flakes for a spicy kick.
- Serve with additional dipping sauces like buffalo or ranch.
