For the Cauliflower Bites:

  • 1 medium cauliflower, cut into florets
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • ½ cup milk (or plant-based alternative)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • Cooking spray

For the Garlic Sauce:

  • ½ cup Greek yogurt (or mayonnaise)
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • ½ tsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, mix flour, milk, garlic powder, paprika, salt, and pepper into a smooth batter.
  • Dip cauliflower florets into the batter, then coat with panko breadcrumbs.
  • Arrange on the baking sheet, spray lightly with cooking spray, and bake for 20-25 minutes until crispy and golden.
  • Meanwhile, mix all garlic sauce ingredients in a bowl.
  • Serve crispy cauliflower bites warm with garlic sauce on the side.

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • Add a pinch of chili flakes for a spicy kick.
