Ingredients

4 haddock fillets (about 6 oz each)

½ cup breadcrumbs (panko preferred for extra crunch)

¼ cup grated Parmesan cheese

2 tbsp melted butter

1 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt and black pepper to taste

Lemon wedges, for serving
Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

Make the coating: In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper. Stir in melted butter and olive oil.

Prep the fish: Pat the haddock fillets dry with paper towels.

Coat: Press the breadcrumb mixture onto the top of each fillet.

Bake: Place fillets on the baking sheet and bake for 12–15 minutes, or until the fish flakes easily and the topping is golden brown.

Serve: Squeeze fresh lemon juice over the top before serving.
