  • ½ cup breadcrumbs (panko preferred for extra crunch)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp melted butter

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt and black pepper to taste

  • Lemon wedges, for serving


Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

  • Make the coating: In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper. Stir in melted butter and olive oil.

  • Prep the fish: Pat the haddock fillets dry with paper towels.

  • Coat: Press the breadcrumb mixture onto the top of each fillet.

  • Bake: Place fillets on the baking sheet and bake for 12–15 minutes, or until the fish flakes easily and the topping is golden brown.
