  • 4 haddock fillets (about 6 oz each)

  • 1 cup panko breadcrumbs

  • ¼ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • 1 egg, beaten

  • Lemon wedges, for serving


Instructions

  • Preheat oven: Set to 425°F (220°C). Line a baking sheet with parchment paper or foil.

  • Prep breadcrumb mix: In a bowl, combine panko, Parmesan, garlic powder, paprika, salt, and pepper. Drizzle in olive oil and stir to coat evenly.

  • Coat the fish: Pat haddock fillets dry. Dip each in beaten egg, then press into breadcrumb mixture until well coated.

  • Bake: Place on the prepared baking sheet and bake for 12–15 minutes, or until fish flakes easily and coating is golden brown.

  • Serve: Garnish with fresh lemon wedges and serve hot.

Notes

  • For extra crispiness, broil for 1–2 minutes at the end.
