4 haddock fillets (about 6 oz each)

1 cup panko breadcrumbs

¼ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp paprika

2 tbsp olive oil

1 egg, beaten

Instructions

Preheat oven: Set to 425°F (220°C). Line a baking sheet with parchment paper or foil.

Prep breadcrumb mix: In a bowl, combine panko, Parmesan, garlic powder, paprika, salt, and pepper. Drizzle in olive oil and stir to coat evenly.

Coat the fish: Pat haddock fillets dry. Dip each in beaten egg, then press into breadcrumb mixture until well coated.

Bake: Place on the prepared baking sheet and bake for 12–15 minutes, or until fish flakes easily and coating is golden brown.
