4 medium potatoes, peeled and cut into 1-inch cubes
200 grams of halloumi cheese, cut into small squares
3 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
Salt and pepper to taste
Fresh parsley, chopped for garnish (optional)
Preheat your oven to 425°F (220°C).
Toss cubed potatoes in a large bowl with olive oil, garlic powder, paprika, salt, and pepper until well coated.
Spread seasoned potatoes in a single layer on a baking sheet lined with parchment paper and roast for about 25 minutes.
While potatoes are roasting, cut halloumi cheese into small squares.
After 25 minutes, gently toss in the halloumi with a spatula and spread in a single layer on the baking sheet.
Roast everything together for an additional 15-20 minutes, until halloumi is golden and crispy.
