1 pound of ground beef
1 tablespoon of olive oil
1 small onion, diced
2 cloves of garlic, minced
1 teaspoon of ground cumin
1 teaspoon of chili powder
Salt and pepper, to taste
1 cup of shredded cheese (cheddar, Monterey Jack, or a blend)
1 cup of refried beans (optional)
4 large flour tortillas
Vegetable oil, for frying
Instructions
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes.
Add the minced garlic and cook for about 30 seconds, stirring constantly.
Add the ground beef to the skillet and cook until browned and no longer pink, about 6-8 minutes.
Sprinkle in cumin, chili powder, salt, and pepper. Stir and let cook for another minute.
If using refried beans, add them now and mix. Stir in the shredded cheese until melted.
Lay the tortillas flat, spoon about 1/4 of the beef mixture onto each, fold the sides, and roll tightly.
Heat vegetable oil in a deep skillet. Test readiness by dropping in a small piece of tortilla.
Carefully place chimichangas seam-side down into the hot oil and fry until golden brown, about 3-4 minutes per side.
Remove chimichangas and place on paper towels to drain.
