  • 1 cup of shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup of refried beans (optional)
  • 4 large flour tortillas
  • Vegetable oil, for frying

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes.
  • Add the minced garlic and cook for about 30 seconds, stirring constantly.
  • Add the ground beef to the skillet and cook until browned and no longer pink, about 6-8 minutes.
  • Sprinkle in cumin, chili powder, salt, and pepper. Stir and let cook for another minute.
  • If using refried beans, add them now and mix. Stir in the shredded cheese until melted.
  • Lay the tortillas flat, spoon about 1/4 of the beef mixture onto each, fold the sides, and roll tightly.
  • Heat vegetable oil in a deep skillet. Test readiness by dropping in a small piece of tortilla.
  • Carefully place chimichangas seam-side down into the hot oil and fry until golden brown, about 3-4 minutes per side.
  • Remove chimichangas and place on paper towels to drain.
