500g (1 lb) beef strips (flank or sirloin work best)
1/2 cup cornstarch
1/4 cup vegetable oil
1 red bell pepper, sliced thin
1 green bell pepper, sliced thin
3 cloves garlic, minced
1 inch ginger, julienned
1/4 cup sweet chili sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
Sesame seeds and spring onions for garnish
Slice beef strips thinly against the grain. Place in a bowl and coat with cornstarch.
Heat vegetable oil in a large pan over medium-high heat.
Fry the beef in batches for about 3-4 minutes until golden brown and crispy.
Sauté minced garlic, ginger, and bell peppers in the same pan for 2-3 minutes.
Return the beef to the pan and add sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Toss until well coated and cook for 1-2 more minutes.
Serve garnished with sesame seeds and chopped spring onions.
