1 cup buttermilk (or plain yogurt as a substitute)
1 tablespoon lime juice (freshly squeezed)
1 cup breadcrumbs (Panko for extra crunch)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh cilantro, chopped
4 sandwich buns (brioche, whole grain, or any preferred type)
Your favorite toppings (sliced avocado, lettuce, tomato, etc.)
Instructions
Marinate the Chicken: In a large bowl, combine the buttermilk, lime juice, salt, and pepper. Add chicken breasts, ensuring they are well-coated. Cover and chill in the fridge for at least 30 minutes.
Prep the Breadcrumb Coating: In another bowl, mix together breadcrumbs, garlic powder, onion powder, paprika, cumin, and chopped cilantro.
Preheat Your Cooking Device: If using an air fryer, preheat to 400°F (200°C); for baking, preheat oven to 425°F (220°C).
Coat the Chicken: Remove marinated chicken from fridge, allow excess buttermilk to drip off, dredge in breadcrumb mixture.
Cook the Chicken: For air frying, place chicken in basket, spray lightly with cooking oil, cook for 12-15 minutes. For baking, place chicken on baking sheet and bake for 20-25 minutes.
Assemble the Sandwich: Let chicken rest for a few minutes, place each piece on a sandwich bun, add toppings.
Enjoy: Sink your teeth into the glorious sandwich and relish every mouthful!
