¼ avocado

Instructions

  • Heat a non-stick skillet over medium heat and lightly spray with cooking oil.
  • Crumble the feta cheese into the skillet and allow it to fry for a minute until it’s slightly golden.
  • Crack the egg over the feta and cook until the white is set but the yolk is still runny.
  • Toast the tortilla or bread while the egg is cooking.
  • Once the egg is done, carefully place it on the toasted bread, sprinkle with dried oregano and red pepper flakes.
