¾ oz / 20g feta cheese
1 small tortilla or slice of toasted bread
¼ avocado
Dried oregano
Red pepper flakes
Cooking oil spray or olive oil spray
Lemon juice
Garnish with pickled onions and chili oil
Instructions
- Heat a non-stick skillet over medium heat and lightly spray with cooking oil.
- Crumble the feta cheese into the skillet and allow it to fry for a minute until it’s slightly golden.
- Crack the egg over the feta and cook until the white is set but the yolk is still runny.
- Toast the tortilla or bread while the egg is cooking.
- Once the egg is done, carefully place it on the toasted bread, sprinkle with dried oregano and red pepper flakes.
- Top with sliced avocado, a squeeze of lemon juice, and garnish with pickled onions and chili oil.
