Description

This crispy fried cod sandwich is golden, flaky, and packed with flavor! Served on a toasted bun with tartar sauce and fresh toppings, it’s the ultimate fish sandwich experience.

For the Fried Cod:

  • 4 cod fillets (46 oz each)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • ½ cup cornmeal (for extra crunch)
  • 2 eggs, beaten
  • ½ cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Vegetable oil (for frying)

For the Sandwich:

  • 4 brioche or sandwich buns, toasted
  • ½ cup tartar sauce
  • 1 cup shredded lettuce
  • 1 tomato, sliced
  • 4 pickle slices (optional)

Instructions

  1. Prepare the dredging station: In one bowl, mix flour, garlic powder, paprika, salt, and pepper. In another, whisk eggs with buttermilk. In a third bowl, combine panko and cornmeal.
  2. Coat the fish: Dredge each fillet in the flour mixture, dip in the egg mixture, then coat with the panko-cornmeal mix.
  3. Fry the cod: Heat about 2 inches of vegetable oil in a pan to 350°F (175°C). Fry each fillet for 3-4 minutes per side, or until golden brown and crispy. Drain on paper towels.
  4. Assemble the sandwich: Spread tartar sauce on the toasted buns, add lettuce, tomato, and pickles. Place the crispy cod fillet on top and close the sandwich.
  5. Serve immediately with fries or coleslaw on the side.

Notes

  • For a lighter version, bake the fish at 400°F (200°C) for 15-18 minutes or air fry at 375°F (190°C) for 12 minutes.
  • Add a spicy kick by mixing sriracha into the tartar sauce.
  • Try a slaw topping for extra crunch and flavor.
