Description
These crispy garlic Parmesan crusted potatoes are golden, flavorful, and perfectly crispy on the outside while tender on the inside. A great side dish for any meal!

- 1 1/2 lbs baby potatoes, halved or quartered
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: In a large bowl, toss the halved or quartered baby potatoes with olive oil, garlic, oregano, thyme, red pepper flakes (if using), salt, and pepper.
- Coat with Parmesan: Sprinkle grated Parmesan cheese over the potatoes and toss to coat evenly.
- Roast the Potatoes: Spread the potatoes out in a single layer on a baking sheet. Roast in the oven for 25–30 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside and tender inside.
- Garnish and Serve: Remove from the oven and garnish with freshly chopped parsley. Serve hot and enjoy!
Notes
- For an extra crispy texture, broil the potatoes for 2-3 minutes at the end of baking.
- You can also add a squeeze of lemon juice for a bright finish before serving.
