For the chicken:

  • 4 boneless chicken breasts

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs

  • 1 tsp Italian seasoning

  • 1 egg, beaten

  • 2 tbsp olive oil

For the garlic sauce:

  • 2 tbsp butter

  • 4 garlic cloves, minced

  • 1 tbsp flour

  • 1 cup chicken broth

  • ½ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • Salt and pepper to taste

  • Chopped parsley (optional)


Instructions

  1. Prepare chicken: Pound chicken to even thickness. Combine Parmesan, breadcrumbs, and seasoning. Dip chicken in egg, then coat in breadcrumb mixture.

  2. Cook chicken: Heat oil in a skillet over medium heat. Cook chicken 4–5 minutes per side, until golden and cooked through. Remove and keep warm.

  3. Make garlic sauce: In the same skillet, melt butter. Sauté garlic for 1 minute. Stir in flour, cook 1 minute more. Gradually add broth and cream. Simmer 3–4 minutes until thickened.

  4. Finish: Stir in Parmesan, season to taste. Pour over crispy chicken. Garnish with parsley.

  • For extra crispiness, bake the coated chicken at 425°F (220°C) for 20–25 minutes.
