Description
This crispy shrimp tempura roll combines crunchy golden shrimp, creamy avocado, and seasoned rice wrapped in nori. Perfect for sushi lovers who crave texture and bold flavor.
Ingredients
8 shrimp, peeled and deveined
1/2 cup all-purpose flour
1/2 cup cornstarch
1/2 cup cold sparkling water
1 egg yolk
Salt, to taste
Oil for frying
2 cups cooked sushi rice, seasoned
4 nori seaweed sheets
1 avocado, sliced
Soy sauce, for serving
Pickled ginger and wasabi, optional
Instructions
1. In a bowl, whisk flour, cornstarch, egg yolk, and cold sparkling water until just combined (do not overmix).
2. Heat oil in a deep pan to 350°F (175°C).
3. Dip shrimp in the batter and fry until golden and crispy, about 2–3 minutes. Drain on paper towels.
4. Place a bamboo sushi mat on a clean surface and lay one sheet of nori on top.
5. Spread an even layer of sushi rice over the nori, leaving 1 inch at the top edge uncovered.
6. Place 2 fried shrimp and a few avocado slices across the center.
7. Using the mat, roll tightly from the bottom up, pressing firmly to seal.
8. Repeat with remaining ingredients.
9. Slice each roll into 6–8 pieces using a sharp, wet knife.
10. Serve with soy sauce, wasabi, and pickled ginger if desired.
Notes
Use tail-on shrimp for a restaurant-style presentation.
Chill the batter ingredients for extra crispiness.
Best enjoyed fresh for maximum crunch.
