5 medium-sized potatoes (Russet or Yukon Gold)
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
½ cup shredded cheese (cheddar or pepper jack)
Fresh cilantro for garnish
Optional toppings: sour cream, avocado, salsa, or jalapeños
Preheat your oven to 425°F (220°C). Wash and peel the potatoes, then cut them into roughly 1-inch cubes.
