  • Salt and pepper to taste
  • ½ cup shredded cheese (cheddar or pepper jack)

  • Instructions

  • Preheat your oven to 425°F (220°C). Wash and peel the potatoes, then cut them into roughly 1-inch cubes.
  • In a large bowl, toss the cubed potatoes with olive oil, smoked paprika, chili powder, ground cumin, garlic powder, onion powder, salt, and pepper.
  • Line a baking sheet with parchment paper or foil. Spread the seasoned potatoes in a single layer.

  • In the last 5 minutes of roasting, sprinkle shredded cheese over the potatoes and return to the oven to melt.
